  • 1 tsp allspice
  • 2 bay leaves
  • 2 carrots
  • 2 stalks celery
  • 1.5 kg chicken
  • 0.5 cup lime juice
  • 2 onions
  • 0.5 tsp pepper
  • 3 potatoes
  • 1 tsp salt
  • 1 scotch bonnet pepper
  • 2 liters water

Directions

Step 1
In a large pot, combine the chicken pieces, lime juice, allspice, salt, and pepper.
Step 2
Add the water and bring to a boil. Reduce the heat and simmer for 30 minutes.
Step 3
Add the potatoes, onions, celery, carrots, bay leaves, and scotch bonnet pepper to the pot.
Step 4
Continue to simmer for an additional 40 minutes, or until the vegetables are tender.
Step 5
Remove the scotch bonnet pepper before serving. Adjust seasoning to taste.
