  • 200 g caster sugar
  • 2 tbsp cornstarch
  • 800 g cream cheese
  • 4 egg whites
  • 4 eggs
  • 200 g graham cracker crumbs
  • 200 g granulated sugar
  • 240 ml heavy cream
  • 120 ml lemon juice
  • 2 tbsp lemon zest
  • 100 g unsalted butter

Directions

Step 1
Preheat the oven to 175°C (350°F).
Step 2
Mix the graham cracker crumbs with melted butter and press into the bottom of a 23cm (9-inch) springform pan.
Step 3
In a large bowl, beat the cream cheese and granulated sugar until smooth.
Step 4
Add the eggs one at a time, beating well after each addition.
Step 5
Stir in the lemon zest, lemon juice, and cornstarch.
Step 6
Pour the filling into the prepared crust and bake for 55-60 minutes, or until the center is almost set.

Let the cheesecake cool completely, then refrigerate for at least 4 hours or overnight.

For the meringue, whisk the egg whites until soft peaks form. Gradually add the caster sugar, beating until stiff peaks form.

Spread the meringue over the chilled cheesecake and bake at 200°C (400°F) for 5-7 minutes, or until the meringue is golden brown.
Step 10
Allow the cheesecake to cool before serving.
