Ingredients

  • 2 bay leaves
  • 10 black peppercorns
  • 2 carrots
  • 2 celery stalks
  • 4 garlic cloves
  • 2 tbsp olive oil
  • 1 onion
  • 6 parsley sprigs
  • 4 thyme sprigs
  • 8 cups water

Directions

Step 1
Heat the olive oil in a large pot over medium heat.
Step 2
Add the onion, carrots, and celery. Sauté for about 5 minutes, until the vegetables start to soften.
Step 3
Add the garlic, bay leaves, thyme, parsley, and peppercorns to the pot. Stir to combine.
Step 4
Pour in the water and bring the mixture to a boil.
Step 5
Reduce the heat to low and let the broth simmer uncovered for about 45 minutes.
Step 6
Strain the broth through a fine-mesh sieve into a large bowl, discarding the solids.
Step 7
Allow the broth to cool before storing it in the refrigerator or freezer.
