Konbu Dashi is a basic Japanese soup stock made from dried kelp (konbu). This simple and easy recipe provides a foundational base for many Japanese dishes.
Directions
Step 1
Wipe the dried konbu with a damp cloth to remove any dirt. Do not remove the white powdery substance as it contains umami.
Step 2
Place the konbu and water in a pot and let it soak for about 30 minutes.
Step 3
After soaking, slowly heat the pot over medium heat. Just before the water starts to boil, remove the konbu from the pot.
