Directions
Step 1
Grease a baking sheet and set aside.

In a large microwave-safe bowl, combine granulated sugar and light corn syrup. Microwave on high for 4 minutes.

Stir in peanuts and microwave on high for another 3 to 4 minutes until the mixture turns a light golden color.

Add butter and vanilla extract to the mixture, stirring until butter is melted and well combined.
Step 5
Microwave for an additional 1 to 2 minutes. The mixture should be golden brown.

Quickly stir in baking soda until the mixture is foamy.
Step 7
Pour the mixture onto the prepared baking sheet and spread it out evenly.
Step 8
Allow the brittle to cool completely, then break into pieces.
