  • 1 tsp butter
  • 120 ml heavy cream
  • 480 ml pure maple syrup

Directions

Step 1
In a large saucepan, combine the pure maple syrup, butter, and heavy cream.
Step 2
Heat the mixture over medium heat, stirring frequently.
Step 3
Once the mixture reaches a boil, continue to stir and cook until it reaches 235°F (113°C) on a candy thermometer.
Step 4
Remove the saucepan from the heat and allow the mixture to cool for 10 minutes.
Step 5
Stir the mixture vigorously until it thickens and begins to lose its gloss.
Step 6
Pour the mixture into molds or onto a parchment-lined baking sheet.
Step 7
Allow the candy to cool completely before removing it from the molds or breaking it into pieces.
