Delight in the traditional Swedish treat, Semla, soft buns filled with almond paste and topped with whipped cream. Perfect for celebrating Fat Tuesday or any special occasion.

Step 1
In a small bowl, dissolve the yeast in warm milk and let it sit for about 5-10 minutes until frothy.

In a large bowl, mix the flour, cardamom, and salt. Add the yeast mixture, sugar, butter, and egg. Knead until a smooth dough forms.

Cover the dough and let it rise in a warm place for about 1 hour, or until it has doubled in size.

Preheat the oven to 375°F (190°C).

Divide the dough into 12 equal pieces and shape them into buns. Place the buns on a baking sheet lined with parchment paper.

Cover the buns and let them rise for another 30 minutes.

Brush the buns with a beaten egg and bake for 15-20 minutes, or until golden brown. Let them cool completely.

Cut off the tops of the buns and scoop out a bit of the insides. Mix the scooped-out bread with the almond paste and a bit of milk to make a smooth filling.

Fill the buns with the almond mixture and top with whipped cream. Place the tops back on and dust with powdered sugar.
