Ingredients

  • 250 grams all-purpose flour
  • 10 grams baking powder
  • 240 ml heavy cream
  • 120 ml milk
  • 2 grams salt
  • 500 grams strawberries
  • 100 grams sugar
  • 120 grams unsalted butter
  • 5 ml vanilla extract

Directions

Step 1
Preheat your oven to 200°C (400°F).
Step 2
In a bowl, combine the sliced strawberries and 50 grams of sugar. Set aside to macerate.
Step 3
In another bowl, mix the flour, baking powder, remaining sugar, and salt.
Step 4
Cut the cold butter into the flour mixture until the texture resembles coarse crumbs.
Step 5
Gradually add the milk to the flour mixture, stirring until just combined.
Step 6
Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
Step 7
Bake for 15-20 minutes or until golden brown. Let cool.
Step 8
In a chilled bowl, whip the heavy cream and vanilla extract until soft peaks form.
Step 9
To assemble, split the shortcakes in half, layer with strawberries and whipped cream, and top with the other half of the shortcake.
