Preheat your oven to 375°F (190°C).

Roll out the pie crusts and cut them into small circles to fit into a mini muffin tin.

Press the pie crust circles into the mini muffin tin cups.

In a medium bowl, whisk together the eggs, milk, salt, and pepper.

Divide the cheese, ham, and green onions evenly among the pie crusts in the muffin tin.

Pour the egg mixture over the fillings in each muffin cup, filling to just below the top of the crust.
