In a large pot, combine the chopped apples, onions, and raisins.

Add the brown sugar, white wine vinegar, ground ginger, ground cinnamon, ground cloves, and salt.

Bring the mixture to a boil, then reduce the heat and simmer uncovered for about 1 hour, stirring occasionally.
