Trim the greens from the beets and set aside. Wash the beets thoroughly.

Wrap each beet individually in aluminum foil and place on a baking sheet.

Roast the beets in the preheated oven for about 45 minutes, or until they are tender when pierced with a fork.

While the beets are roasting, wash the beet greens thoroughly and chop them coarsely.

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant.
