Ingredients

4 Servings
  • 500 ml beef stock
  • 1 tsp black pepper
  • 50 g butter
  • 2 tbsp flour
  • 100 ml milk
  • 2 tbsp olive oil
  • 2 onions
  • 1 tbsp parsley
  • 900 g potatoes
  • 1 tsp salt
  • 8 sausages

Directions

Step 1
Preheat your oven to 200°C (180°C fan).
Step 2
Place the sausages on a baking tray and cook in the oven for 25-30 minutes, turning occasionally, until golden brown and cooked through.
Step 3
Meanwhile, place the potatoes in a large pot of salted water and bring to a boil. Cook for about 15-20 minutes until tender.
Step 4
Drain the potatoes and return them to the pot. Add the butter and milk, then mash until smooth. Season with salt and black pepper.
Step 5
In a large frying pan, heat the olive oil over medium heat. Add the onions and cook for about 10 minutes until soft and caramelized.
Step 6
Sprinkle the flour over the onions and cook, stirring, for 2 minutes. Gradually add the beef stock, stirring constantly, until the gravy thickens.
Step 7
Serve the sausages on top of the mashed potatoes, drizzled with the onion gravy. Garnish with chopped parsley if desired.
