Directions

Heat olive oil in a large skillet over medium heat.

Add ground beef and cook until browned, breaking it apart with a spoon.

Add chopped bell peppers, onion, and minced garlic to the skillet. Cook until vegetables are softened.

Stir in diced tomatoes, tomato sauce, beef broth, rice, salt, and black pepper.

Bring the mixture to a boil, then reduce heat to low and cover the skillet. Simmer for 18-20 minutes, or until the rice is cooked and liquid is absorbed.
