  • 0.5 teaspoon black pepper
  • 12 pieces cannelloni pasta
  • 1 carrot
  • 1 teaspoon dried oregano
  • 2 cloves garlic
  • 150 grams mozzarella cheese
  • 0.5 teaspoon nutmeg
  • 2 tablespoons olive oil
  • 1 onion
  • 50 grams parmesan cheese
  • 200 grams ricotta cheese
  • 1 teaspoon salt
  • 250 grams spinach
  • 500 ml tomato sauce
  • 1 zucchini

Directions

Step 1
Preheat your oven to 180°C (350°F).
Step 2
In a large pan, heat the olive oil over medium heat. Add the onion and garlic, and sauté until they are soft and fragrant.
Step 3
Add the chopped zucchini and carrot to the pan, and cook until they are tender.
Step 4
Stir in the fresh spinach and cook until wilted. Remove the pan from heat and let the mixture cool slightly.
Step 5
In a large bowl, combine the ricotta cheese, half of the mozzarella, and half of the parmesan cheese. Add the cooked vegetable mixture, salt, pepper, oregano, and nutmeg. Mix well.
Step 6
Fill each cannelloni tube with the vegetable and cheese mixture using a spoon or piping bag.
Step 7
Spread a thin layer of tomato sauce on the bottom of a baking dish. Arrange the filled cannelloni tubes over the sauce.
Step 8
Pour the remaining tomato sauce over the cannelloni. Sprinkle the remaining mozzarella and parmesan cheese on top.
Step 9
Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
Step 10
Remove the foil and bake for an additional 10-15 minutes, or until the cheese is golden and bubbly.

Let the cannelloni rest for a few minutes before serving. Enjoy!
