A fragrant and flavorful Indian rice dish made with basmati rice, aromatic spices, and vegetables. Perfect as a side or a main dish.
Directions
Step 1
Rinse the basmati rice under cold water until the water runs clear. Set aside.
Step 2
Heat the vegetable oil in a large pot over medium heat. Add the cumin seeds, cinnamon stick, bay leaf, cloves, and cardamom pods. Sauté for 1-2 minutes until fragrant.

Add the chopped onion and sauté until golden brown.
Step 4
Stir in the minced garlic and grated ginger. Cook for another 1-2 minutes.

Add the mixed vegetables and sauté for 5 minutes.
Step 6
Add the rinsed basmati rice to the pot and sauté for 2-3 minutes, ensuring the rice is well coated with the spices and oil.

Pour in the water and add salt. Stir well and bring to a boil.

Reduce the heat to low, cover the pot, and let it simmer for 15-20 minutes, or until the rice is cooked and the water is absorbed.
Step 9
Remove from heat and let it sit, covered, for another 5 minutes.

Fluff the rice with a fork and garnish with chopped cilantro before serving.
