Pav Bhaji is a popular Indian street food consisting of a spicy vegetable mash served with buttered buns. This dish is a delightful blend of various vegetables cooked in aromatic spices.
Directions
Step 1
Boil the potatoes, cauliflower, green peas, and carrots until they are soft. Mash them well and keep them aside.

Heat 2 tablespoons of butter in a large pan. Add chopped onions and sauté until they turn golden brown.

Add ginger paste, garlic paste, and chopped green chilies. Cook for another 2-3 minutes.

Add chopped tomatoes and cook until they become soft and mushy.

Add the mashed vegetables to the pan. Mix well.

Add pav bhaji masala, turmeric powder, red chili powder, and salt. Mix and cook for 10-15 minutes, stirring occasionally.

Add the remaining butter and mix well. Garnish with chopped coriander leaves and a squeeze of lemon.

Toast the pav buns with some butter on a separate pan until they are golden brown.
Step 9
Serve the hot bhaji with buttered pav buns, garnished with additional coriander leaves and lemon wedges.
