These Potato Tacos (Tacos de Papa) feature crispy tortillas filled with a savory and spiced potato mixture. Perfect for a vegetarian meal or a snack, they are easy to make and delicious to eat.

Peel and chop the potatoes. Boil them in salted water until tender, about 20 minutes. Drain and mash the potatoes.

In a skillet, heat 1 tablespoon of vegetable oil over medium heat. Add the chopped onion and minced garlic, and sauté until soft and fragrant, about 5 minutes.

Add the mashed potatoes to the skillet. Season with salt, black pepper, and ground cumin. Mix well and cook for another 5 minutes, stirring occasionally. Remove from heat.

Heat the corn tortillas on a dry skillet until pliable.
