  • 0.5 teaspoon black pepper
  • 12 pieces corn tortillas
  • 1 cup crumbled queso fresco
  • 2 pieces garlic cloves
  • 1 teaspoon ground cumin
  • 1 piece onion
  • 4 pieces potatoes
  • 1 cup salsa
  • 1 teaspoon salt
  • 2 cups shredded lettuce
  • 0.5 cup sour cream
  • 1 tablespoon vegetable oil
  • 2 cups vegetable oil for frying

Directions

Step 1
Peel and chop the potatoes. Boil them in salted water until tender, about 20 minutes. Drain and mash the potatoes.
Step 2
In a skillet, heat 1 tablespoon of vegetable oil over medium heat. Add the chopped onion and minced garlic, and sauté until soft and fragrant, about 5 minutes.
Step 3
Add the mashed potatoes to the skillet. Season with salt, black pepper, and ground cumin. Mix well and cook for another 5 minutes, stirring occasionally. Remove from heat.
Step 4
Heat the corn tortillas on a dry skillet until pliable.
Step 5
Place a spoonful of the potato mixture in the center of each tortilla, fold in half, and press gently to seal.
Step 6
In a large frying pan, heat the 2 cups of vegetable oil over medium-high heat. Fry the tacos in batches until golden and crispy, about 2-3 minutes per side. Drain on paper towels.
Step 7
Serve the tacos topped with shredded lettuce, sour cream, crumbled queso fresco, and salsa.
