Ingredients

  • 1 bay leaf
  • 4 cups beef broth
  • 0.5 teaspoon black pepper
  • 0.5 cup butter
  • 0.5 cup dry white wine
  • 8 slices French bread
  • 1.5 cups gruyere cheese
  • 0 cup olive oil
  • 4 onions
  • 0.5 teaspoon salt
  • 1 teaspoon thyme

Directions

Step 1
Melt the butter in a large pot over medium heat. Add the olive oil.
Step 2
Stir in the onions and cook until caramelized, about 25 minutes.
Step 3
Add the beef broth, white wine, bay leaf, thyme, salt, and black pepper. Bring to a boil, then reduce the heat and simmer for 20 minutes.
Step 4
Preheat the oven's broiler.
Step 5
Ladle the soup into oven-safe bowls. Place a slice of French bread on top of each bowl.
Step 6
Sprinkle the grated Gruyere cheese over the bread slices.
Step 7
Place the bowls under the broiler until the cheese is melted and bubbly, about 2-3 minutes.
Step 8
Serve hot.
