Directions
Step 1
In a bowl, combine chicken pieces with 1 tablespoon of soy sauce and 1 tablespoon of cornstarch. Mix well and set aside to marinate for 15 minutes.
Step 2
Heat 2 tablespoons of vegetable oil in a large pan or wok over medium-high heat. Add the marinated chicken and stir-fry until golden and cooked through. Remove from the pan and set aside.

In the same pan, add the remaining 1 tablespoon of vegetable oil. Add garlic and ginger, and sauté for about 1 minute until fragrant.

Add the carrot, bell pepper, and broccoli florets to the pan. Stir-fry for about 5 minutes until the vegetables are tender-crisp.

Return the chicken to the pan. Add the chicken broth, hoisin sauce, remaining 2 tablespoons of soy sauce, and remaining 1 tablespoon of cornstarch. Stir well to combine.

Simmer for about 3-4 minutes until the sauce has thickened. Stir in the toasted almonds and sesame oil.
