Step 1
Preheat your oven to 150°C (300°F).
Step 2
Make small incisions all over the leg of lamb and insert the garlic slices into the slits.
Step 3
Rub the lamb with olive oil, salt, pepper, lemon zest, and juice. Place the rosemary sprigs on top.
Step 4
Place the onions and carrots in a roasting pan. Lay the lamb on top of the vegetables.
Step 5
Pour the red wine and chicken stock into the pan.
Step 6
Cover the roasting pan with foil and roast in the preheated oven for 4 hours.
Step 7
Remove the foil and roast for an additional 30 minutes to allow the lamb to brown.
Step 8
Let the lamb rest for 15 minutes before carving and serving.
