A delicious and healthy grilled veggie sandwich perfect for lunch or a light dinner. Fresh vegetables are grilled to perfection and layered on your favorite bread with cheese and a hint of balsamic vinegar.

  • 1 tbsp balsamic vinegar
  • 0.5 tsp black pepper
  • 4 ciabatta rolls
  • 113 g goat cheese
  • 4 mushrooms
  • 2 tbsp olive oil
  • 1 red bell pepper
  • 1 red onion
  • 0.5 tsp salt
  • 1 zucchini

Directions

Step 1
Preheat the grill to medium-high heat.
Step 2
In a large bowl, combine the sliced red bell pepper, zucchini, red onion, and mushrooms.
Step 3
Drizzle the vegetables with olive oil and balsamic vinegar, then sprinkle with salt and black pepper. Toss to coat evenly.
Step 4
Place the vegetables on the preheated grill. Cook for 5-7 minutes, turning occasionally, until tender and slightly charred.
Step 5
Remove the vegetables from the grill and set aside.
Step 6
Spread the goat cheese evenly on the bottom halves of the toasted ciabatta rolls.
Step 7
Layer the grilled vegetables on top of the goat cheese.
Step 8
Top with the other half of the ciabatta roll and serve immediately.
