  • 0.5 teaspoon black pepper
  • 4 carrots
  • 4 cloves garlic
  • 1 lemon
  • 2 tablespoons olive oil
  • 1 onion
  • 4 potatoes
  • 1 teaspoon salt
  • 1 tablespoon thyme
  • 1 whole chicken

Directions

Step 1
Preheat your oven to 375°F (190°C).
Step 2
Rinse the chicken inside and out, then pat dry with paper towels.
Step 3
Rub the chicken with olive oil, salt, and black pepper.
Step 4
Stuff the cavity with minced garlic, halved lemon, and fresh thyme.
Step 5
Place the carrots, potatoes, and onion in the bottom of a Dutch oven.
Step 6
Set the chicken on top of the vegetables.
Step 7
Cover the Dutch oven and place it in the preheated oven.
Step 8
Roast for about 90 minutes or until the internal temperature of the chicken reaches 165°F (74°C).
Step 9
Remove the lid for the last 15 minutes to allow the skin to become crispy.
Step 10
Let the chicken rest for 10 minutes before carving and serving with the roasted vegetables.
