  • 1 tsp cream of tartar
  • 2 egg whites
  • 200 g granulated sugar
  • 150 ml light corn syrup
  • 1 tsp vanilla extract
  • 80 ml water

Directions

Step 1
In a medium saucepan, combine the granulated sugar, light corn syrup, and water. Stir to mix well.
Step 2
Place the saucepan over medium-high heat and bring the mixture to a boil. Continue boiling until the temperature reaches 115°C (240°F) on a candy thermometer.
Step 3
While the sugar mixture is heating, beat the egg whites and cream of tartar in a large mixing bowl until soft peaks form.
Step 4
Once the sugar mixture reaches the desired temperature, remove it from the heat. Slowly pour the hot syrup into the beaten egg whites while continuing to beat on low speed.
Step 5
Increase the mixer speed to high and continue to beat until the mixture is thick and glossy, about 7-8 minutes.
Step 6
Add the vanilla extract and beat for another 1-2 minutes until well combined.
Step 7
Allow the marshmallow creme to cool completely before using or storing in an airtight container.
