Ingredients

  • 125 g all-purpose flour
  • 2 tsp baking powder
  • 240 ml boiling water
  • 200 g brown sugar
  • 200 g granulated sugar
  • 120 ml milk
  • 1 tsp salt
  • 50 g unsweetened cocoa powder
  • 1 tsp vanilla extract
  • 2 tbsp vegetable oil

Directions

Step 1
Preheat your oven to 180°C (350°F). Grease a 9x9-inch baking dish.
Step 2
In a medium bowl, whisk together the flour, granulated sugar, cocoa powder, baking powder, and salt.
Step 3
Add the milk, vegetable oil, and vanilla extract to the dry ingredients and mix until smooth.
Step 4
Spread the batter evenly in the prepared baking dish.
Step 5
Sprinkle the brown sugar evenly over the batter.
Step 6
Pour the boiling water over the brown sugar, but do not stir.
Step 7
Bake for 35-40 minutes, until the cake is set and a toothpick inserted into the center comes out clean.
Step 8
Let the cake cool for at least 10 minutes before serving. The cake will have a pudding-like layer at the bottom.
