Directions
Step 1
In a bowl, combine the pork slices with soy sauce and cornstarch. Mix well and let it marinate for 15 minutes.
Step 2
Heat 1 tablespoon of vegetable oil in a wok or large skillet over medium-high heat. Add the marinated pork and stir-fry until the pork is browned and cooked through. Remove from the wok and set aside.
Step 3
In the same wok, add another tablespoon of vegetable oil. Add the minced garlic and ginger, stir-fry until fragrant.

Add the sliced red and green bell peppers, and dried red chilies. Stir-fry for 2-3 minutes until the peppers are slightly tender.
Step 5
Return the cooked pork to the wok. Add rice vinegar, sugar, and chicken broth. Stir well to combine all ingredients.
Step 6
Cook for another 2-3 minutes until the sauce has thickened slightly. Add the chopped scallions and stir well.
Step 7
Serve hot with steamed rice.
