Directions
Step 1
In a large bowl, combine warm water and sugar. Sprinkle the yeast on top and let it sit for about 5 minutes until it becomes foamy.

Add the flour and salt to the yeast mixture and mix until a dough forms. Knead the dough for about 10 minutes until smooth and elastic.

Place the dough in a greased bowl, cover with a damp cloth, and let rise in a warm place for about 1 hour, or until doubled in size.

Preheat the oven to 400°F (200°C).

In a large pot, bring 8 cups of water to a boil and add the baking soda.

Punch down the dough and divide it into two equal pieces. Shape each piece into a loaf.

Carefully place each loaf into the boiling water for 30 seconds on each side, then remove with a slotted spoon and place on a baking sheet lined with parchment paper.

In a small bowl, whisk together the egg yolk and 1 tbsp water. Brush the egg wash over the loaves.
