Ingredients

  • 30 g dill
  • 4 green onions
  • 30 ml lemon juice
  • 60 ml olive oil
  • 1 onion
  • 30 g parsley
  • 5 g pepper
  • 200 g rice
  • 5 g salt
  • 500 g spinach
  • 500 ml water

Directions

Step 1
Heat the olive oil in a large pot over medium heat.
Step 2
Add the chopped onion and green onions, and sauté until they become translucent.
Step 3
Add the chopped spinach and cook until wilted.
Step 4
Stir in the rice and coat it well with the olive oil and vegetables.
Step 5
Add the chopped dill and parsley, then pour in the water.
Step 6
Season with salt and pepper to taste.
Step 7
Bring to a boil, then reduce the heat to low, cover, and simmer for about 20 minutes or until the rice is cooked.
Step 8
Remove from heat and stir in the lemon juice.
Step 9
Let the Spanakorizo sit for a few minutes before serving to allow the flavors to meld.
