Directions
Step 1
Heat the vegetable oil in a pan over medium heat.
Step 2
Add the mustard seeds and cumin seeds. Cook until they start to crackle.
Step 3
Add the chopped onion, garlic, and ginger. Sauté until the onion is golden brown.
Step 4
Add the chopped tomatoes and green chili (if using). Cook for about 10 minutes, until the tomatoes are soft.
Step 5
Add the salt, sugar, and vinegar. Stir well and cook for another 5 minutes.
Step 6
Remove from heat and let it cool slightly.
Step 7
Transfer the chutney to a blender and blend to a smooth or slightly chunky consistency, as preferred.
Step 8
Garnish with fresh coriander and serve.
