Step 1
Preheat your oven to 160°C (320°F).

Heat the olive oil in a large oven-safe pot over medium-high heat.

Season the beef roast with salt and black pepper, then sear it in the pot until browned on all sides. Remove and set aside.

In the same pot, add the chopped onion and garlic and sauté until fragrant.

Add the carrots and potatoes, and cook for a few minutes until slightly browned.

Pour in the beef broth and red wine, scraping up any browned bits from the bottom of the pot.

Return the beef roast to the pot and add the thyme and rosemary.

Cover the pot with a lid and place it in the preheated oven. Cook for about 3 hours, or until the meat is tender.

Remove the pot from the oven and let it rest for a few minutes before serving.
