  • 2 eggplant
  • 2 cups mozzarella cheese
  • 2 tablespoons olive oil
  • 0.5 cup parmesan cheese
  • 1 teaspoon salt
  • 2 cups tomato sauce

Directions

Step 1
Preheat your oven to 375°F (190°C).

Slice the eggplants into 1/4-inch thick rounds.

Sprinkle the eggplant slices with salt and let them sit for 30 minutes to draw out moisture.

Rinse the eggplant slices and pat them dry with paper towels.

Heat the olive oil in a large skillet over medium heat.

Cook the eggplant slices in batches until golden brown on both sides, about 3-4 minutes per side.
