Chicken Cordon Bleu with Dijon Sauce

A classic French-inspired dish, Chicken Cordon Bleu features chicken breasts stuffed with ham and cheese, then breaded and baked to perfection. A tangy Dijon cream sauce adds the perfect finishing touch.

Ingredients

  • 60 g all-purpose flour
  • 5 g black pepper
  • 120 g breadcrumbs
  • 30 g butter
  • 4 chicken breasts
  • 30 g Dijon mustard
  • 2 eggs
  • 4 slices ham
  • 240 ml heavy cream
  • 15 ml olive oil
  • 5 g salt
  • 4 slices Swiss cheese

Directions

Step 1
Preheat the oven to 180°C (350°F).
Step 2
Place each chicken breast between two pieces of plastic wrap and pound to an even thickness.
Step 3
Place a slice of ham and a slice of Swiss cheese on each chicken breast. Roll up each chicken breast and secure with toothpicks if necessary.
Step 4
Dredge each rolled chicken breast in flour, then dip in beaten eggs, and finally coat with breadcrumbs.
Step 5
Heat butter and olive oil in a large oven-safe skillet over medium heat. Brown the chicken on all sides.
Step 6
Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through.
Step 7
While the chicken is baking, prepare the Dijon cream sauce. In a small saucepan, heat the heavy cream over medium heat until it begins to simmer.
Step 8
Whisk in the Dijon mustard and continue to cook until the sauce thickens, about 5 minutes. Season with salt and black pepper.
Step 9
Remove the chicken from the oven and let rest for a few minutes. Slice and serve with the Dijon cream sauce.
