Directions
Step 1
Peel and cut the sweet potatoes into large chunks.
Step 2
In a large pot, bring water to a boil and add the sweet potato chunks.
Step 3
Cook the sweet potatoes until they are very tender, about 20-25 minutes.
Step 4
Drain the sweet potatoes and return them to the pot.
Step 5
Add the butter, heavy cream, salt, and black pepper to the pot.
Step 6
Use a hand blender or a regular blender to purée the mixture until smooth and silky.
Step 7
Serve the sweet potato purée warm.
