Ingredients

  • 0.5 tsp black pepper
  • 3 carrots
  • 750 ml chicken broth
  • 500 g chicken thighs
  • 400 g chickpeas
  • 300 g couscous
  • 3 cloves garlic
  • 0.5 tsp ground cinnamon
  • 1 tsp ground cumin
  • 1 tsp ground ginger
  • 1 tsp ground turmeric
  • 3 tbsp olive oil
  • 1 onion
  • 1 tsp salt
  • 1 tomato
  • 2 zucchini

Directions

Step 1
Heat the olive oil in a large pot over medium heat.
Step 2
Add the chopped onion and garlic, sauté until softened.
Step 3
Add the chicken pieces and cook until browned on all sides.
Step 4
Stir in the ground cumin, cinnamon, ginger, and turmeric. Cook for another minute.
Step 5
Add the chopped tomato, carrots, and zucchini to the pot. Cook for 5 minutes, stirring occasionally.
Step 6
Pour in the chicken broth and bring to a boil.
Step 7
Reduce the heat, cover, and simmer for 20 minutes or until the vegetables are tender.
Step 8
Stir in the canned chickpeas, salt, and black pepper. Cook for another 5 minutes.
Step 9
Prepare the couscous according to the package instructions.
Step 10
Serve the cooked couscous topped with the chicken and vegetable mixture.
