  • 1 bay leaf
  • 2 cups beef broth
  • 0.5 teaspoon black pepper
  • 2 carrots
  • 2 celery stalks
  • 4 garlic cloves
  • 4 lamb shoulder chops
  • 2 tablespoons olive oil
  • 1 onion
  • 1 cup red wine
  • 1 teaspoon salt
  • 1 teaspoon thyme
  • 2 tablespoons tomato paste

Directions

Step 1
Preheat your oven to 350°F (175°C).
Step 2
In a large ovenproof pot, heat the olive oil over medium-high heat.

Season the lamb shoulder chops with salt and black pepper, then sear them in the pot until browned on both sides. Remove the lamb and set aside.

In the same pot, add the sliced onion, minced garlic, carrots, and celery. Cook until the vegetables are softened.

Stir in the tomato paste and cook for 1-2 minutes.

Add the red wine, beef broth, bay leaf, and dried thyme. Bring the mixture to a simmer.

Return the lamb shoulder chops to the pot, cover with a lid, and transfer to the preheated oven.

Bake for 2 hours or until the lamb is tender and the sauce has thickened.
