Ingredients

  • 240 g all-purpose flour
  • 60 g butter
  • 60 ml heavy cream
  • 900 g russet potatoes
  • 1 tsp salt

Directions

Step 1
Boil the potatoes in a large pot of water until tender, about 20 minutes.
Step 2
Drain the potatoes and mash them thoroughly.
Step 3
Mix in the butter, heavy cream, and salt until well combined.
Step 4
Let the mixture cool to room temperature.
Step 5
Once cooled, gradually add the flour to the potato mixture to form a dough.
Step 6
Divide the dough into golf ball-sized portions and roll each ball out on a floured surface into thin rounds.
Step 7
Cook each round on a dry griddle or skillet over medium-high heat until brown spots appear, about 1-2 minutes per side.
Step 8
Serve warm with butter, sugar, or your favorite savory toppings.
