This refreshing asparagus salad is perfect for spring and summer. It combines tender asparagus with fresh vegetables, all tossed in a light dressing for a healthy and delicious side dish.

  • 500 g asparagus
  • 0.5 tsp black pepper
  • 200 g cherry tomatoes
  • 100 g feta cheese
  • 2 tbsp lemon juice
  • 3 tbsp olive oil
  • 1 red onion
  • 1 tsp salt

Directions

Step 1
Bring a large pot of salted water to a boil.
Step 2
Add the asparagus and cook for 3-4 minutes until tender-crisp.
Step 3
Drain and immediately plunge the asparagus into ice water to stop the cooking process. Drain well.
Step 4
In a large bowl, combine the asparagus, cherry tomatoes, and red onion.
Step 5
In a small bowl, whisk together the lemon juice, olive oil, salt, and black pepper.
Step 6
Pour the dressing over the vegetables and toss to combine.
Step 7
Sprinkle the feta cheese over the salad before serving.
