  • 1 bell pepper
  • 800 g black beans
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 4 garlic cloves
  • 2 tbsp olive oil
  • 1 onion
  • 1 tsp oregano
  • 1 tsp paprika
  • 0.5 tsp pepper
  • 1 tsp salt
  • 3 tbsp tomato paste
  • 800 g tomatoes
  • 500 ml vegetable broth

Directions

Step 1
Heat the olive oil in a large pot over medium heat.
Step 2
Add the chopped onion and garlic, and sauté until the onion is translucent.
Step 3
Stir in the chopped bell pepper and cook for another 5 minutes.
Step 4
Add the diced tomatoes, tomato paste, chili powder, cumin, paprika, oregano, salt, and pepper. Stir well to combine.
Step 5
Pour in the vegetable broth and bring the mixture to a simmer.
Step 6
Add the black beans and stir to combine.
Step 7
Cover the pot and let the chili simmer for about 30 minutes, stirring occasionally.
