Step 1
Combine the cucumbers, green bell peppers, red bell peppers, and onions in a large bowl.

Sprinkle with salt and cover with cold water. Let stand for 2 hours.

Drain well and press out excess liquid.

In a large pot, combine the vinegar, sugar, celery seeds, and mustard seeds. Bring to a boil.

Add the drained vegetable mixture and return to a boil. Reduce heat and simmer for 10 minutes.

Pack the relish into hot, sterilized jars, leaving 1/4 inch headspace. Seal immediately.
