  • 0.5 tsp black pepper
  • 500 ml chicken broth
  • 8 pieces chicken thighs
  • 400 g diced tomatoes
  • 100 g dried apricots
  • 0.5 cup fresh cilantro
  • 4 garlic cloves
  • 1 tbsp ginger
  • 1 tsp ground cinnamon
  • 1 tsp ground coriander
  • 2 tsp ground cumin
  • 1 tsp ground turmeric
  • 2 tbsp honey
  • 2 tbsp olive oil
  • 1 onion
  • 1 tsp paprika
  • 1 tsp salt

Directions

Step 1
Heat olive oil in a large pot over medium heat.
Step 2
Add the chopped onion and cook until translucent.
Step 3
Stir in the minced garlic and grated ginger, cooking for another minute.
Step 4
Add the chicken thighs to the pot and brown on all sides.
Step 5
Mix in the cumin, cinnamon, turmeric, paprika, and coriander, coating the chicken well.
Step 6
Pour in the chicken broth and diced tomatoes, stirring to combine.
Step 7
Add the honey, dried apricots, salt, and black pepper.
Step 8
Bring to a boil, then reduce heat to low, cover, and simmer for 45 minutes.
Step 9
Garnish with chopped fresh cilantro before serving.
