  • 250 g all-purpose flour
  • 125 g butter
  • 2 tbsp cold water
  • 1 egg
  • 3 eggs
  • 160 ml evaporated milk
  • 100 ml hot water
  • 60 g sugar
  • 80 g sugar
  • 1 tsp vanilla extract

Directions

Step 1
Preheat your oven to 200°C (392°F).
Step 2
In a large bowl, mix flour and sugar. Add the chilled butter cubes and rub into the flour mixture until it resembles fine breadcrumbs.
Step 3
Add 1 egg and 2 tbsp cold water to the mixture. Mix until a dough forms. Wrap the dough in plastic wrap and refrigerate for 30 minutes.
Step 4
Roll out the dough on a floured surface to about 1/4 inch thickness. Cut out circles and press them into tart molds.
Step 5
In a bowl, whisk together 3 eggs, evaporated milk, hot water, 80g sugar, and vanilla extract until well combined.
Step 6
Strain the mixture through a sieve to ensure a smooth custard filling.
Step 7
Pour the custard filling into the prepared tart shells.
Step 8
Bake in the preheated oven for 15-20 minutes until the filling is set and the crust is golden brown.
Step 9
Cool the tarts on a wire rack before serving.
