Preheat your oven to 200°C (392°F).

In a large bowl, mix flour and sugar. Add the chilled butter cubes and rub into the flour mixture until it resembles fine breadcrumbs.

Add 1 egg and 2 tbsp cold water to the mixture. Mix until a dough forms. Wrap the dough in plastic wrap and refrigerate for 30 minutes.

Roll out the dough on a floured surface to about 1/4 inch thickness. Cut out circles and press them into tart molds.

In a bowl, whisk together 3 eggs, evaporated milk, hot water, 80g sugar, and vanilla extract until well combined.
