  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 2 tbsp kosher salt
  • 2 tbsp olive oil
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1 whole chicken

Directions

Step 1
Pat the chicken dry with paper towels.
Step 2
Rub the kosher salt all over the chicken, including inside the cavity.
Step 3
Place the chicken on a rack set over a baking sheet and refrigerate, uncovered, for at least 12 hours or overnight.

Preheat your oven to 220°C (425°F).

Mix the black pepper, garlic powder, onion powder, and paprika in a small bowl.

Rub the olive oil all over the chicken, then sprinkle the spice mixture evenly over the chicken.
Step 7
Place the chicken in a roasting pan and roast in the preheated oven for about 60-75 minutes, or until the internal temperature reaches 75°C (165°F) and the skin is golden and crispy.
