  • 3 carrots
  • 2 celery stalks
  • 2 chicken breasts
  • 6 cups chicken broth
  • 1 teaspoon fresh thyme
  • 3 garlic cloves
  • 2 tablespoons olive oil
  • 1 onion
  • 0.5 teaspoon pepper
  • 4 potatoes
  • 1 teaspoon salt

Directions

Step 1
Heat olive oil in a large pot over medium heat.
Step 2
Add diced onion and minced garlic. Cook until onion is translucent.
Step 3
Add diced carrots and celery, cook for another 5 minutes.
Step 4
Stir in chicken broth, diced potatoes, and bring to a boil.
Step 5
Reduce heat and let simmer for 10 minutes.

Add chicken breasts, salt, pepper, and thyme. Simmer until chicken is cooked through, about 20 minutes.

Remove chicken from the pot, shred it with two forks, and return it to the pot.
