  • 1 tablespoon baking powder
  • 360 grams cake flour
  • 240 ml coconut milk
  • 4 eggs
  • 0.5 teaspoon salt
  • 400 grams sugar
  • 120 grams sweetened shredded coconut
  • 226 grams unsalted butter
  • 2 teaspoons vanilla extract

Directions

Step 1
Preheat your oven to 350°F (175°C) and grease a bundt pan.
Step 2
In a bowl, sift together the cake flour, baking powder, and salt.
Step 3
In a separate large bowl, cream the butter and sugar until light and fluffy.
Step 4
Add the eggs one at a time, beating well after each addition.
Step 5
Mix in the vanilla extract.

Alternately add the dry ingredients and the coconut milk to the butter mixture, beginning and ending with the dry ingredients.

Fold in the shredded coconut.
Step 8
Pour the batter into the prepared bundt pan and smooth the top.

Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
