In a large bowl, mix the yeast with warm milk and let it sit for 5 minutes until frothy.

Add the flour, sugar, salt, butter, and eggs to the yeast mixture and knead until you get a smooth dough.

Cover the dough with a damp cloth and let it rise in a warm place for about 1 hour or until it has doubled in size.

Roll out the dough on a floured surface to about 1 cm thickness and cut into squares or circles.

Heat the oil in a deep-fryer or large pot to 180°C.

Fry the dough pieces in batches until golden brown on both sides, about 2-3 minutes per side.

Remove the fastnachts with a slotted spoon and drain on paper towels.

Serve warm or at room temperature. Optionally, dust with powdered sugar before serving.
