  • 0.5 cup basil
  • 500 g beef
  • 1 bell pepper
  • 400 ml coconut milk
  • 3 tbsp curry paste
  • 2 tbsp fish sauce
  • 3 cloves garlic
  • 1 tbsp ginger
  • 2 tbsp oil
  • 1 onion
  • 1 tbsp sugar

Directions

Step 1
Heat oil in a large pan over medium heat.
Step 2
Add the chopped onion, garlic, and ginger, and sauté until fragrant.
Step 3
Add the Thai red curry paste and cook for another minute.
Step 4
Add the thinly sliced beef to the pan and cook until browned.
Step 5
Pour in the coconut milk, fish sauce, and sugar, and stir to combine.
Step 6
Add the sliced bell pepper and bring the mixture to a simmer.
Step 7
Cook for 20-25 minutes until the beef is tender and the sauce has thickened.
Step 8
Stir in the fresh basil leaves just before serving.
Step 9
Serve hot with steamed rice.
