Classic Spiked Eggnog

  • 6 eggs
  • 0.5 tsp ground cinnamon
  • 250 ml heavy cream
  • 500 ml milk
  • 1 tsp nutmeg
  • 180 ml rum
  • 200 g sugar
  • 1 tsp vanilla extract

Directions

Step 1
Separate the egg yolks from the whites and set aside.
Step 2
In a large bowl, whisk the egg yolks and sugar together until thick and creamy.
Step 3
Slowly add the milk and cream to the egg yolk mixture, whisking continuously.
Step 4
Pour the mixture into a saucepan and cook over medium heat, stirring constantly until it thickens (do not let it boil).
Step 5
Remove from heat and let it cool slightly.
Step 6
Stir in the rum, nutmeg, vanilla extract, and ground cinnamon.
Step 7
In a separate bowl, beat the egg whites until they form stiff peaks.
Step 8
Gently fold the egg whites into the mixture until fully incorporated.
Step 9
Chill the eggnog in the refrigerator for at least 2 hours before serving.
Step 10
Serve cold with a sprinkle of nutmeg on top.
