Ingredients

  • 300 g all-purpose flour
  • 500 g cranberries
  • 2 eggs
  • 200 g granulated sugar
  • 1 tbsp orange zest
  • 1 pinch salt
  • 115 g unsalted butter
  • 1 tsp vanilla extract

Directions

Step 1
Preheat the oven to 350°F (175°C).
Step 2
In a medium bowl, combine the flour, 100g of sugar, and salt.
Step 3
Cut in the butter until the mixture resembles coarse crumbs.
Step 4
Press the mixture into the bottom and up the sides of a 9-inch pie pan.
Step 5
In another bowl, whisk the eggs, remaining sugar, orange zest, and vanilla extract.
Step 6
Gently fold in the cranberries.
Step 7
Pour the cranberry mixture into the prepared crust.
Step 8
Bake for 40-45 minutes, or until the filling is set and the crust is golden.
Step 9
Allow the pie to cool before serving.
