Ingredients

  • 1 tsp black pepper
  • 400 ml coconut water
  • 60 ml fish sauce
  • 3 cloves garlic
  • 500 g pork belly
  • 2 shallots
  • 50 g sugar
  • 100 ml water

Directions

Step 1
In a large pot, add sugar and melt over medium heat until it turns into a caramel color.
Step 2
Add pork belly chunks to the pot and stir well to coat the meat in the caramel.
Step 3
Add garlic, shallots, and black pepper, and continue to stir for a few minutes.
Step 4
Pour in the fish sauce and coconut water. Bring to a boil.
Step 5
Reduce the heat and let it simmer for about 40 minutes, or until the pork is tender and the sauce has thickened.
Step 6
Add water if the mixture becomes too dry during cooking.
Step 7
Serve the caramelized pork belly with steamed rice.
