Dissolve the citric acid in 60 milliliters of water.

Pour the milk into a large pot and stir in the citric acid solution.

Cover the pot and let it sit undisturbed for 5-10 minutes until the curd forms.

Cut the curd into 2.5 cm (1 inch) cubes and let it sit for 5 minutes.

Heat the curds to 41°C (105.8°F) while gently stirring.

Remove from heat and continue stirring for 5 minutes.

Scoop out the curds with a slotted spoon and place them into a microwave-safe bowl.

Microwave the curds for 1 minute to warm them up, then gently knead the curds to expel the whey.

Repeat the microwaving and kneading process until the curds become stretchy and smooth.

Shape the cheese into a ball and place it in a bowl of cold water for a few minutes to firm up.

Dissolve the salt in 1 liter of water to create a brine solution.

Place the cheese ball into the brine solution for 5-10 minutes for additional flavor.
