  • 1 baguette
  • 1 bay leaf
  • 2000 ml beef broth
  • 1 tsp black pepper
  • 240 ml dry white wine
  • 1 tsp fresh thyme
  • 3 garlic cloves
  • 225 g Gruyere cheese
  • 30 ml olive oil
  • 1 tsp salt
  • 1 tsp sugar
  • 113 g unsalted butter
  • 6 yellow onions

Directions

Step 1
In a large pot, melt the butter with the olive oil over medium heat.
Step 2
Add the sliced onions and cook, stirring occasionally, until they are caramelized, about 25 minutes.
Step 3
Sprinkle the sugar over the onions and continue to cook for another 5 minutes.
Step 4
Add the minced garlic and cook for another minute.
Step 5
Pour in the beef broth and white wine. Add the bay leaf and thyme.
Step 6
Season with salt and black pepper to taste. Simmer the soup for 30 minutes.
Step 7
Preheat the oven to 400°F (200°C).
Step 8
Place the baguette slices on a baking sheet and toast them in the oven until golden brown.
Step 9
Ladle the soup into oven-safe bowls. Place a toasted baguette slice on top of each bowl and sprinkle generously with grated Gruyere cheese.
Step 10
Place the bowls under the broiler until the cheese is melted and bubbly, about 3-5 minutes.
